Green or blue are the best colors, depending on your subject matter. Superman wouldn't work in front of a bluescreen. The best screens are built into the set, like at Public Television studios. Large spaces allow you to get some distance between your subject and screen, which is important to avoid casting shadows on the screen.
For "talking head" stuff where the screen doesn't have to be huge, I think you can hang a green bedsheet or tack a smooth material to the wall.
It's too expensive, but we've played with this at tradeshows and it's our dream chromakey toy:
